This pizza is SO good, because the matzo gives the crust a crunch like thin-crust pizza!
1 WHOLE WHEAT matzo board (can buy at Walmart locally where I live)1/2 cup low fat/high fiber pizza sauce (check your labels--I use Kroger or Hunt's) 1/2 cup non-fat shredded mozzarella (if you want to use low- fat, of course, adjust your points)
Toppings & seasonings of your choice--just play around til you get the best-tasting combination for YOU. Even if you add toppings to equal a point or two more, it's still going to be better than the points you would spend at Domino's! I use lots of mushrooms for 0 points to give it moisture, add a few bacon bits (less than 1 point), sprinkle on some added oregano, and just add whatever I'm feeling like, and adjust the points as needed.
Assemble together, making sure to cover the matzo thoroughly with the pizza sauce. I bake in my toaster oven right on the rack at 400o for about 10 minutes until melted and bubbly. Cut into 4 square slices with pizza cutter.
Hope you enjoy this alternative to regular, fat-laden pizza!
