Ingredients
1/3 Cup italian-style bread crumbs, 1 tbsp Parmesan cheese grated, 1 tsp italian seasoning, 1/4 tsp garlic powder, 1 med eggplant, 2 egg whites lightly beaten, 1 cup tomatoe sauce, 1/2 cup shredded reduced fat mozzarella cheese.
Instructions
1) preheat oven of 350 degrees. Coat an 8 x 8 x 2 inch baking dish with non-stick cooking spray and set aside.
2)combine bread crumbs, Parmesan cheese, italian seasoning, and garlic powder together in a medium size bowl and set aside.
3)remove skin from eggplant and trim off ends. then slice eggplant into 1/2 inch thick slices.
4)Dip each slice of eggplant first into egg whites, and then into bread crumb mixture. bake eggplant on a non-stick cookie sheet for 20 min or until lightly browned.
5)Place a layer of eggplant on bottom of prepared baking dish, then add 1/3 of tomatoe sauce and 1/3 of mozzarella cheese. Repeat 2 more layers in same order. Bake 10 more minutes or until cheese is melted and sauce in bubbly.
